I do not think you are over reacting. She sounds very nice, but a little uncaring also. If there is really nothing going on, she should either let you see the e-mails, or stop sending them. It seems as if maybe there are some worries in your heart about all of it, and that is valid. Marriage is built on trust, and unless you feel that your questions are answered, that trust will be built when she is really forthright with you. Also, it sounds like she gets serious with a lot of people, so be careful. Good luck to you, just tell her your feelings. Make sure she does not make you feel bad, or leave you with the impression that you need to change how you feel to please her. Both of your needs are important. I know in my own life that my sweet husband and I get along best when we are both caring and honest with each other.
